DIELECTRIC STUDY OF THE STATE OF WATER IN AQUEOUS SOLUTIONS AND HYDRATED SOLID SAMPLES OF MONO-AND DI-SACCHARIDES
Abstract
BY THE USE OF THE DEPOLARISATION THERMOCURRENT METHOD, A STUDY WAS MADE OF THE DIELECTRIC BEHAVIOUR OF FROZEN AQUEOUS SOLUTIONS OF THE MONOSACCHARIDES GLUCOSE, GALACTOSE, MANNOSE, RIBOSE, AND ARABINOSE AND THE DISACCHARIDES CELLOBIOSE, LACTOSE, AND MALTOSE, IN THE TEMPERATURE REGION OF 80-300K AND CONCENTRATIONS BETWEEN 0 .0003-15 MOL/LT, AND OF THE HYDRATED SOLID SAMPLES OF GALACTOSE AND MALTOSE IN THE RANGE OF HYDRATION H=0.8-20.2% AND THE SAME TEMPERATURE REGION THE DIM WAS TO GAIN INFORMATION ON THE STATE OF WATER, ON THE HYDRATION MECHANISM AND THE NATURE OF THE HYDRATION POSITIONS. A SYSTEMATIC STUDY OF THE L.T REGION (100- 160K) SHOWED THAT SUGAR SOLUTIONS CAN BE DIVIDED INTO TWO CATEGORIES. SOLUTIONS OF GLUCOSE, GALACTOSE AND MANNOSE HAVE SIMILAR BEHAVIOUR AND ARE CHARACTERIZED BY A CONTINUOUS TRANSITION FROM BOUND WATER TO FREE WATER, FOR CONCENTRATIONS UP TO 0.7 MOL/LT, AND BY BOND WATER ALONE FOR HIGHER CONCENTRATIONS.
