Η παραγωγή τροφίμων όσο απαραίτητη είναι άλλο τόσο αντιμετωπίζει πολυδιάστατες προκλήσεις. Η αύξηση της κατανάλωσης, η εκ των ων ουκ άνευ ασφάλεια και υγιεινή, η πολυεπίπεδη ποιότητα, που απροπό περιλαμβάνει και την περιβαλλοντική βιωσιμότητα των συστημάτων παραγωγής, είναι μερικές από αυτές. Η επιστημονική κοινότητα εξετάζει τις συνέργειες και τις συγκρούσεις που εμφανίζονται σε αυτές στο πλαίσιο της συχνής διελκυστίνδας της με την ποσότητα, αλλά και συχνά μεταξύ συνιστωσών της ποιότητας. Στο τελευταίο ερευνητικό πεδίο κινείται η παρούσα διατριβή εξετάζοντας τις περιβαλλοντικές επιπτώσεις του συστήματος τροφίμου-νερού-περιβάλλοντος με έμφαση στην τοπικότητα και συγκεκριμένα στην παραγωγή αμπελοοινικών προϊόντων ονομασίας προέλευσης (ΠΟΠ). Food production is as essential as it is essential, but it also faces multi-dimensional challenges. Increasing consumption, essential safety and hygiene, multi-layered quality, including the environmental sustainability of production systems, are just some of them. The scientific community is examining the synergies and conflicts that arise in these in the context of the frequent tug-of-war between quantity and quantity, and often between components of quality. It is in the latter field of research that this thesis examines the environmental impact of the food-water-environment system with emphasis on localism and specifically on the production of wine products of designation of origin (PDO). In particular, the study focused on the assessment of the environmental impact of the production of PDO Muschat Rio Patra, PDO Muschat Patras and PDO Corinthian currants Vostitsa. Life cycle assessment (LCA) as described in the ISO 14040 group of standards responded to the quantification of impacts, illuminated the critical control points of the production process and compared similar vine products in terms of their environmental performance. The methodology used for the raisin assessment is CML using SimaPro software in which ten intermediate impacts were calculated. The system considered was from cultivation to the exit gate of the processing plant and at a functional unit one kgr of product in a 200g plastic bag.For the wine study, ReCiPe (2016) was used to calculate eighteen intermediate impacts with the same software, with system boundaries from cultivation to the exit gate of the wineries and a functional unit of one litrer of glass bottle of wine produced. Five years of data were studied for PDO Muscat of Rio Patras in organic farming. These data were compared for one year with those of PDO Muscat Patras in conventional cultivation. The calculation of the water footprint used the most widely used Hoekstra calculation methodology in which all components of the water used for food production were included in the indirect and direct water use. Three years of data were used with a reference unit of one kilogram of harvested dry and fresh product. The system boundaries included the cultivation of Corinthian grape vine Vitis vinifera L. sp. black Corinth, var. Apyrena. The above methodologies were designed to report on a plot using appropriate precision agriculture practices in the formation of the research proposal, primary field data, meteorological stations, analyses and a geographic information system with a dual objective and to model the estimation process and the reliability of the results. Regarding the study on the raisin water-environment matrix, the measurements show the environmental suitability of the crop and consequently of the PDO food in the biosystem in which it grows. The water footprint of the crop is proportional to the change in the total precipitation of the area during the study period.
